Food Science & Technology students embark on a Farm-to-Fork overseas study trip to Bangkok

The Farm-to-Fork overseas study trip to Bangkok, Thailand from 16 to 22 March 2025 was an unforgettable and enriching experience for 20 students from the Diploma in Food Science & Technology (DFST) course. Over seven immersive days, students explored the vibrant Thai food ecosystem from traditional agriculture to high-tech food manufacturing, gaining firsthand insights into every stage of the food value chain.

At King Mongkut's Institute of Technology Ladkrabang and Assumption University, students participated in engaging hands-on activities such as Total Phenolic Compound analysis of various teas and preparing the iconic Thai dish Som Tum from scratch. These academic collaborations not only deepened their understanding of food science but also offered a taste of international university life and sparked meaningful cross-cultural friendships.

Industry visits to renowned companies like Yakult and CP Group provided a look into large-scale food production and the cutting-edge technologies shaping Thailand鈥檚 food industry. In contrast, visits to rice paddies, vegetable farms and sea salt farm allowed students to appreciate the labour and heritage behind traditional food sources, a true embodiment of the farm-to-fork concept.

Beyond the academic and industry learning, what truly made the trip special were the friendships forged, the shared laughter and the new perspectives gained. For many, this was more than a study trip, it was a transformative journey that brought classroom knowledge to life in the most flavourful and unforgettable way.
